Scotch Shortbread

INGREDIENTS:

1 cup butter
½ cup granulated sugar
2½ cups sifted all-purpose flour

 

INSTRUCTIONS:

Cream 1 cup butter and ½ cup granulated sugar till light and fluffy.

Stir in 2½ cups sifted all-purpose flour. Chill several hours. Divide in half. Roll each half into a rectangle ¼ to ½ inch thick.

Cut diagonally to make diamond-shaped cookies. Prick each cookie with the tines of a fork.

Place on ungreased cookes sheets and bake at 300 degrees for about 30 minutes.

Cool slightly and remove from pan. Makes approximately 50 cookies.
